Tuna ceviche

The wonderful Food Encyclopedia describes ceviche as a  “form of citrus-marinated seafood salad, popular mainly in Latin American countries.” The encyclopedia reminds that the dish can carry a different personality from each different country.

Well, the popularity is spreading fast.

Chef David Schmidt of L’Auberge Restaurant on Oak Creek offers a recipe for Tuna Ceviche featuring albacore.
