Tuna can be used in so many different ways to feed a family, and Angela Day of the Independent Online offers five recipes, each relying on a can of albacore tuna:

Mixed tuna salad (with baby potatoes, green beans, tomatoes, lemon dressing and more) ;

Tuna rice salad (with rice, baby corn, tomatoes and more);

Butternut tuna tart (butternut squash, cheddar, cream and eggs);

Phyllo tuna tarts (with leeks, spinach, cheddar, eggs, herbs and cream);

Tuna and pasta bake (with red pepper, mustard, cheddar cheese and pasta).

And visit your local library, check out the section on cookbooks to explore for new recipes … you’ll be amazed at what you can find.  Enjoy!
