Tuna bounty

“When it comes to taste, nutrition and culinary creativity, nothing beats a can of your favourite fish!” writes Rita Demontis for the Toronto Star in Canada.

And Rita includes a bounty of new recipes with her article that display albacore’s great flexibility….

Apple, Cheddar and Wild Albacore tuna melt includes mayonnaise, albacore, lemon, celery, onion, tart apple, cheddar, and baguette. (We can’t wait to try this one!)

Moroccan Tangiers Tuna includes couscous, celery, mint, and tuna.

Linguine with Tuna and Peas, with olive oil, onion, carrot, celery, frozen peas, tomato, and tuna.

The Apple-Cheddar Tuna Melt reminds us of one of our favorite salads.

Tuna Salad

2 cups of argula or other lettuce

1/2 cup of halved red grapes

1/4 cup chopped onion

1 can F/V St. Jude smoked albacore tuna

1 tart apple, thin slices

16 walnut halves

1/2 cup grated sharp cheddar cheese

Layer or combine ingredients and drizzle with a light balsamic dressing. Serves 4.
