A pepper crust is a perfect contrast to the smooth melt-in-your-mouth taste of St. Jude tuna. Good Morning America provides a recipe for Pepper-Crusted Tuna Steak with Teriaki Sauce and Wasabi-Smashed Potatoes.
For ingredients, you need russet potatoes, wasabi, soy milk, mirin wine, soy sauce, honey, toasted sesame oil, garlic, tuna steaks and lots of fresh cracked black pepper.
Another crust is offered by Clive’s and described by the Times Colonist in Victoria: “seared albacore tuna, crusted with sesame seeds and served on a bed of pleasantly acidic carrot and cucumber slaw.”
