Crostini combinations

There are thousands of ways to make some crostini with F/V St Jude tuna, but only a few simple rules.

The steps are easy: Slice the bread very thin. Drizzle with oil and don’t overheat. When drizzling with oil, sauce or honey – use the lightest of touches. Use the thinnest of slices for  cheese, vegetables or other accouterments. Shred the tuna. Use only bits of the tangiest ingredients like capers or grapefruit.

We’re just posting some of our favorite ingredients below. Have fun, experiment and add your own ideas.

Varieties of F/V St Jude tuna: natural, original, Mediterranean, garlic, jalapeno or smoked

Cheese layers:  Goat cheese, sharp cheddar, Gorgonzola, Parmesan, mozzarella, Brie, Asiago, smoked cheese.

More soft layers: whole or mashed avocado, egg salad, orange, lime, grapefruit, mushrooms, argula, spinach, asparagus tips, fresh or roasted tomatoes.

Crunchy topping: Cucumber, apple, pear, unripe peach, green onions or chives, turnips, radishes, fennel, celery, leeks, green peppers, crispy bacon.

Toppings: capers, olive slices, cracked peppercorns, sweet peppers, honey, olive oil, hot flavored oil, wine or liquor

For those of you who remember high school math, this is a combination rather than permutation problem – and 7 varieties of St Jude x 8 cheese layers x 11 more soft layers x 12 crunchy toppings x 8 toppings = 59,163 combinations!
