The Ottawa Citizen offers a recipe Grilled Albacore with Pistou.

And what is pistou? “Provence’s much-loved answer to pesto,” writes Food & Wine Magazine.

Ingredients for the Ottawa Citizen recipe include albacore, fresh basil, garrlic, Parmesan, olive oil.  For Food & Wine’s base for sauce or soup, Paula Wolfert adds tomatoes. She notes: “There’s only one way to make true pistou—by hand.”
