Grand salad

The gardens are ready for harvest, and if you don’t have a garden, then head to the farmers market to make grand salads that serve as one-course meals, suggests The Modesto Bee. For Crunchy Garden Salad, Patricia Wells uses canned albacore and adapts a recipe from “Salad as a Meal.” Ingredients include 2 cans of albacore tuna, fresh lemon juice and zest, lettuce or parsley, tomatoes, green bell pepper, onions,  zucchini, cucumber, cherry tomatoes, capers and cornichon pickles. This is a chopped salad that is filling, tangy and full of zest!
