Okay, we admit it – we’re among the millions who use the New Year as an excuse to get in shape. That means lots of salads and inventing new salads. Here’s one relying on St Jude albacore filets and watercress. Let us know what you think!
Hot Tuna Salad
2 St Jude tuna filets, 2 T green peppercorns, 2 cloves garlic, crushed, 2 T chopped lemon grass, 3 T sesame oil
6 radishes, cut julienne; 1 tomato cubed; 3 green onions, chopped; bag watercress
1 T olive oil, 2 T fresh lemon juice, dash salt – mixed
Cut tuna into two pieces each and mairnate for an hour in oil with first set of ingredients. Arrange watercress and chopped vegetables on four plates. Heat oil in skillet. When hot, cook tuna quickly, a few minutes on each side, drizzle with marinade and when done, arrange on top watercress. Top with dressing and enjoy!
